Christine’s Everything Jams Blueberry Cookies
Victoria’s mom, Christine, made these incredible Blueberry Cookies utilizing Everything Jam’s blueberry preserves. They were so incredible Scott + Victoria decided to share the recipe with everyone!
Ingredients
1 1/2 cups all purpose flour
1 tsp cornstarch
1/4 tsp salt
3/4 tsp baking powder
1/2 cup unsalted butter
3/4 cup sugar
1 egg
1 tsp pure vanilla
4 oz white chocolate chips
3/4 cup blueberries
FOR FILLING
2.5 oz softened cream cheese
1 tbsp powdered sugar
1/2 tsp pure vanilla
1-2 tsp Everything Jam’s Blueberry Preserves
Instructions
In a small bowl whisk together dry ingredients: flour, cornstarch, salt and baking powder then set aside.
Cream butter and sugar on high speed for about 2 minutes, until light and creamy. Add egg and vanilla then mix to combine.
Put mixer on low then add in dry ingredients and mix.
Fold in about 3/4 of white chocolate chips, reserve remaining to press on top of cookies.
Fold in blueberries with rubber spatula gently, try not to break the berries. The dough will be thick and sticky.
Cover and refrigerate for 2 hours.
To make the filling: mix cream cheese, vanilla and powdered sugar then place in fridge.
When ready to bake preheat oven to 350 F and line baking sheets with parchment paper.
To assemble cookies:
Scoop one heaping tbsp of dough and make a deep bowl. Fill with 1 tsp of filling and 3/4 tsp of blueberry preserves.
Top with 1/2 tbsp of cookie dough and seal any openings.
Roll gently to make a ball.
Press a few white chocolate chips on top and sides of each cookie.
Before baking freeze cookie balls for 10 minutes.
Arrange cookie balls onto baking sheet leaving 3 inches apart (they will spread while baking).
Bake 16-18 minutes.
Cool on baking sheet for 10 minutes then transfer on a rack to cool completely.
